Good-bye Monday!

Well our day may have not started out as planned but what better way to get rid of those monday blues then to request Daddy's famous "breakfast" for dinner ! So to go one step further and bring this delicious meal over the top... serve it in Muffin Tins... why you ask? Because its "Muffin Tin Monday" of course (saw it on another site so I can't take the credit for the muffin tins). It's a once a week ritual that I cannot always say is actually done on Monday but hey I try (FYI you can also have muffin TIN Tuesday). The kids LOVE it and eat anything that's put in it. How can a mom or dad not just love that! Lookout Top Chef!
